I just made this potato salad last night and it is so good that I have to share it with you immediately. This will be my go to potato salad all summer.
2 lbs red potatoes quartered
4 green onions chopped
1 good sized sprig of dill
1 cup of Greek yogurt
1 cup of mayo
1/4 salt
Cook your potatoes in a well salted pot of water, just until they are tender. You don’t want them to fall apart. While your potatoes are cooking, combine the yogurt, mayo, dill, green onions, and salt. Let that sit until your potatoes are done cooking. Once your potatoes are tender, drain the water and let them cool. Combine dressing and potatoes. Refrigerate overnight.
This salad couldn’t be easier to make…or tastier. Seriously, the dressing is super creamy and light so it doesn’t feel really heavy like a lot of potato salads tend to be.
